Chicken Salad Served 3 Ways

I really love a good homemade chicken salad. I want chunks of chicken, pieces of celery, halves of grapes and the perfect blend of mayonnaise, lemon juice and seasonings. None of that mushy stuff for me! All it takes is a little effort and you’ll have a bowl of delicious chicken salad in no time. But who wants to eat chicken salad on its own? Not me! Here is how to make your own basic chicken salad and how to serve it up in three delicious ways.

Chicken Salad in an Avocado Bowl: Take an avocado half, with the pit removed, and scoop out some of the flesh. This is to make some room for the chicken salad. Spritz the avocado with lemon juice and add a dash of salt. Top off with the chicken salad. Because the avocado is rather round you may find that it rolls when you eat it. To prevent this, cut off a section of the avocado (peel and a bit of flesh) at the most roundest part on the bottom. This well help the avocado bowl stay still.

Chicken Salad on a Cracker: This is classic Americana. Ritz crackers topped off with chicken salad is an appetizer as American as Apple Pie. For this, make sure you chop up the chicken into smaller pieces. This makes for a great appetizer for a party. 

Chicken Salad Croissant Sandwich: This is my favorite way to eat chicken salad. The flaky buttery croissant compliments the fresh flavor of the salad. Just slice the croissants down the middle (or buy a few from your nearby Dunkin’ Donuts and have them do that for you) and fill it up with yummy chicken salad. This is great for taking with you on a picnic. Just pack up the salad and croissants separately and assemble later.

Ingredients:

2 cups of chopped cooked chicken

1 stalk of celery, finely chopped

¼ of halved grapes

¼ cup of mayonnaise

juice of half a lemon

salt and pepper

Use rotisserie chicken, leftover roast chicken or boil a couple of chicken breasts until cooked and let cool. Chop up the chicken to your desired size. I like big chunks! In a bowl, add the celery, grapes, chicken, mayo, lemon juice. Mix and season with salt and pepper. Keep refrigerated (or in a cooler) until ready to serve. Enjoy!
