Challah French Toast with Strawberries and Peaches

Sweet bread and fresh fruits make for a delicious breakfast or brunch.

French toast is one of those recipes I've been making since I was a little girl. It's both easy and fun to make and the results are always super delicious.

I always loved whipping the eggs with a whisk, the fragrant smell of the cinnamon and vanilla and the golden mottled brown color the french toast gets when you cook it on the griddle.

Over the years, I found that Challah Bread, a braided egg and honey bread tradition in Jewish cuisine, is the best for French toast. Because it's already sweet and eggy, it stands up well to dipping batter. Some breads can just fall apart but Challah holds up well. Also, since Challah is sweet on it's own, I don't find the need to add sugar to the batter. Pair French Toast with some fresh fruit like strawberries and peaches and drizzle some 100 percent maple syrup over the top and you have a winning combination for your next brunch.

Ingredients:

1 loaf of Challah Bread, thickly sliced

4 whole eggs

4 egg whites

1 cup of skim milk (or vanilla Almond Milk)

1/2 tsp of cinammon

1 tsp of vanilla 

butter for greasing the griddle

hulled and chopped fresh strawberries

sliced fresh peaches

100% maple syrup

Take your challah bread and slice into thick slices making sure you cut off the rounded ends before you start slicing. Set aside. Depending on the size of your Challah bread you could make anywhere from 10-20 slices of French toast. There will be enough egg mixture for them all!

In a large bowl, add the 4 eggs and 4 egg whites and whisk. Then stream in the 1 cup of milk/Almond milk and whisk as you go. Stir in the cinnamon and vanilla. Add a few slices of the Challah bread into the egg mixture.

Heat up your griddle using medium heat. Add some butter to grease the griddle. When the butter starts to sizzle, add the soaked Challah bread slices to the griddle. Cook for a few minutes on each side until it's golden brown. While the French toast is cooking, add more slices to the egg mixture for more soaking. Repeat until all the French toast is cooked.

Top each slice of French Toast with some strawberries and peaches and 100 percent maple syrup. Serve with a side of crispy, salty bacon for a nice flavor contrast. Enjoy!
