The Four-Ingredient Wonder Dish

A quick—and spicy—addition to your table!

What if I told you that I had a great recipe that only required four ingredients? You'd think I'd be joking, right? I'm completely serious. Don't believe me? Well here are the four ingredients: fire-roasted tomatoes, chorizo sausage, garbanzo beans and cilantro. That's it! And the result is a very tasty (and rather spicy) part of a delicious dinner.

I made a more complicated version of this recipe. What resulted was a tasty dish which had a very weak sauce and a bit too much salt from the added bacon and pancetta. So I tweaked the recipe and simplified it to consist of only four ingredients. Because those four ingredients were really what make this dish spectacular. The spicy and flavorful chorizo sausage when paired with the fire-roasted tomatoes creates a flavor explosion in your mouth. The mild flavor and firm texture of some garbanzo beans balance it out and the cilantro gives the dish a fresh taste. I highly recommend serving this over some white rice and with a side of roasted asparagus. Enjoy!

Ingredients:

1 15 oz can of fire roasted tomatoes

1 15 oz can of garbanzo beans, rinsed

1 small package of chorizo sausage, sliced

1 bunch of cilantro, chopped (amount to taste)

 

In a skillet, add the chorizo sausage and cook on medium-low heat until the sausage starts to render some of its fat. It's not necessary to add oil to the pan because chorizo is a very oily sausage and its best to cook it in its own fat. One the oil starts to render, turn up the heat and cook the chorizo until it's nice and browned on both sides of each slice. Add the fire-roasted tomatoes and garbanzo beans and stir. You can add some salt and pepper at this point to season. Cook for about 15 minutes on medium-low heat. Stir again. Serve over rice and top with some of the chopped cilantro. Enjoy while hot.
